Dude why do some of my pics show the shot details like the ISO and what not but not on others?

Because some of your pics were shot RAW without being edited too roughly when it comes to the format.
The shot-details are a part of the RAW-file.

really? I had thought that JPEG can include the EXIF data (which is what this information is called) too.
